As I stated in my previous post, this whole blog is going to be totally different than what it used to be. So here's something a little out of my comfort zone: home made almond milk. In case you don't know about two years ago I started eating healthier and going to the gym. As the days, months and years go by I learn more and more about food. I tried being a vegetarian for a little bit a while back, but started eating chicken, turkey and fish again. Recently I have decided to go back to being a veg but also cut out dairy completely. Before, I was eating yogurt and cottage cheese only. Now, I am totally dairy (besides egg whites) and meat free. I want everyone to know that I am not trying to push my eating habits on anyone! I won't judge you if you eat steak in front of me. I won't even judge you if you eat an entire bag of Doritos around me. Along with fashion I will be sharing healthy, dairy, soy, sometimes gluten and meat free food recipes with you all and if you don't like it well then just go ahead and click the exit button right now! BYE.
Now to get on with this post :) I decided the other day to try my hand at making almond milk. Although it sounds hard it was literally one of the easiest things I have ever made. Here's my step-by-step recipe for making your own almond milk that doesn't contain some of the chemicals that store bought almond milks can contain.
Ingredients:
5 cups water
1.5 cups almonds (with or without skin)
1 teaspoon vanilla extract
Cinnamon
Honey and Maple Syrup (optional. I did not use either one in this batch)
Tools:
Blender
3-4 layers of cheesecloth
Strainer

Step One: allow almonds to sit in water over night |

Once the almonds are soft enough dump the remaining water out and pour the almonds into a blender. Add 1.5 cups of water and blend for 1-2 minutes. The contents will be chunky, but that's normal. |

Once blended add 1 teaspoon of vanilla, or more if you desire. |

Next add a dash (or a ton like me) of cinnamon! Once you've added your desired amount of cinnamon, vanilla(maple syrup or honey) add 2.5 more cups of water and blend for another 2-3 minutes. |

Now you're ready to milk those almonds! Layer 3-4 pieces of cheesecloth into a strainer. The cheesecloth will allow the liquid to pass through, catching the small bits of almonds the blender leaves behind. Because the almonds I purchased had the skin still on them I used a regular pasta strainer to just catch the rest of the skin or bigger chunks of almonds left over. |

Now that you strained your milk you are now ready to enjoy it! (Sweet french press huh!) |
